We are talking to Brian Belefant, author of the book “Spouse Hunting: Using the Rules of Real Estate to Find the Love of Your Life.” We’ll discuss the book, about the joys of categorizing, and Gina loses her mind when Doctor Who gets a shout out.

The French Pearl

Brian recounted for us a particular cocktail he used to love at a bar he favored “back in the day”. Until sadly, the bartender who knew how to make the cocktail left. I think we all mourn alongside him, knowing how missing a favorite cocktail or having it poorly made can suck So after some research, I learned that this particular cocktail was invented by a complete badass female bartender, Audrey Saunders (AKA the Libation Goddess), at the Pegu Club in NYC. Recipe is below and damn is it good. I also found out that Pastis is basically the same as Absinthe, only without the wormwood. Fun fact: the ‘pearl’ in the name has to do with how it gets totally opaque after you mix it. When you mix anise-flavored liqueur and water this happens naturally and it’s called “louching”. You’re welcome.

Ingredients

  • ¾ ounce fresh lime juice 

  • ¾ ounce simple syrup

  • 1 sprig spearmint

  • 2 ounces Gin

  • ¼ ounce Pastis or Absinthe

  • Lime and mint for garnish

Instructions

Combine the lime juice, simple syrup, and mint sprig in a cocktail shaker. Muddle the ingredients. Next, add the pastis/absinthe and gin. Fill the shaker to the top with ice and shake well. Double strain into a chilled cocktail glass. Garnish with a lime wheel and mint sprig.
